Pecan pie is a real Southern delicacy that I missed out on due to fussy eating during childhood. Well folks, I'm makin' up for lost time now that I'm a gluttonous adult!
The sheer beauty of this recipe is that if you eat it naked by the light of a waning crescent moon with one foot in the air while listening to "Die Fledermaus", it has absolutely no calories or fat!
Mix together:
2 tablespoons melted butter
7 ounces light brown sugar
Add and beat in:
2 eggs
1 teaspoon vanilla
¼ teaspoon salt
Add and beat lightly:
8 fluid ounces golden syrup
Pour into an unbaked pie shell (I use Delia's recipe of 4oz flour, 2 oz margarine, 2 oz butter, a little salt, and cold water to bind) and sprinkle on top:
2 ounces pecan or walnut halves
Bake at 375°F for 35 minutes.
This recipe is probably best accompanied by a glass of ice cold milk.
